Makes 12 muffins
(Such a wonderful taste combination, a favorite at our B&B)
Preheat oven to 400* F. Grease muffin tin.
In a small bowl, mix brown sugar and sour cream, stir in nuts and set aside.
In a large bowl mash banana, add egg, sugar and oil and beat well. In separate bowl combine flour, powder and salt, whisk dry ingredients. Add dry mixture to banana mixture and stir just until moistened. DO NOT OVERMIX!
Spoon equally into muffin tin and top each with spoonful of pecan mixture. Bake at 400* for 15 minutes or until golden brown. Serve warm.
